Hailing from Zapotitlan de Vadillo, Jalisco, Chacolo Brocha Ixtero Amarillo is a destilado de agave. It is produced using maguey Brocha, a sub-variety of agave Angustifolia related to Espadin, and maguey Ixtero Amarillo, a sub-variety of agave Rhodacantha linked to Mexicano. The agaves are traditionally cooked in an underground oven and manually milled using axes. Following this, the agaves undergo natural fermentation in wooden tinas with the addition of mountain spring water. Ultimately, the agaves are double distilled using a Filipino style still.
