The 12-year-old mortar is distilled in so-called Wee Witchie stills. It is aged in former sherry barrels made of European oak and former Bourbon barrels made of American oak.
The number 2.81 on the label stands for the number of distillations. Mortlach manages to distil his whisky 2.81 times.
The process is also called “The Way” by Mortlach and starts with a distillation process in which six different stills are used and 1/5 of them are distilled a third time by another small still called Wee Witchie.
