Pure Dusk is made by a long-standing brewery in Akita, Japan, with a history dating back to 1656. The sake master-brewer, known as the toji, brings generations of experience to each bottle of Shimizu-no-Mai sake. This premium sake is crafted using pure water from the meeting point of three cold mountain rivers. It also relies on locally sourced, artisanal rice that is milled to a fine 45% of its original size. These elements combine to create a sake with a clean, elegant flavor and aroma. It has hints of pear, green apple, and a touch of minerality in its scent, a delicate structure with notes of fresh orange peel and cantaloupe in its taste, and a moderately dry finish.
