The CO2 produced during fermentation is collected by the distillery in pressurized tanks and further processed for the production of carbonated beverages. The residues from distillation are used as a natural fertilizer on sugar cane fields.
The Ron Sostenible Experimental Whisky Cask is aged for 8 years in bourbon barrels. The rum is finished in port casks, which gives it its excellent notes of port wine.
