The grapes are handpicked around mid to end of September, to preserve the freshness. Spontaneous Fermentation with pied de cuve. About 30% whole bunches. 4-5 days of maceration then softly pressed. No sulfites added.
Aged for 8-10 months in concrete egg tanks, stainless steel and ceramic vats on lees.
Spontaneous MLF.
No fining, wide filtration.
The vintage started with quite good water reserve from the winter, there was no frost or hail in springtime. The hard drought of the summer months did not affect bunch development. Approaching the harvest, the prolonged heat and limited humidity from the early hours of the day kept the bunches very healthy. The Sangiovese from the sandy soil was picked on September 14th and totally destemmed, while the schists on September 29th doing a 100% WBF.
