VINIFICATION
The two lots were fermented using all native yeast and about 30% whole clusters in small 1 -1.5 ton lots for 12-20 days. All cap management is manual and no pump-overs are employed. The wines are pressed at dryness, settled and put to barrel for native, malolactic fermentation.
AGING
Aged in neutral, French oak barrels for 10 months
