Drawing inspiration from a traditional recipe originating in the mountainous Brianza region of Northern Italy, Columbus crafts its Crespone Salami using carefully selected, well-trimmed, antibiotic-free pork cuts. Seasoned with pepper, garlic, and sherry wine, the pork is then encased in natural casings and undergoes a slow aging process, resulting in a remarkably tender texture and an authentic ‘country style’ flavor profile. Colmbus’ varieties are aged for a minimum of 26 days to ensure optimal taste and quality.
