The KI NO BI GO Kyoto Dry Gin was released in a limited edition to mark the 5th anniversary of the launch of KI NO BI Kyoto Dry Gin. The addition “GO” in the name refers to the Japanese word for “five”, which emphasizes both the anniversary and the increased alcohol content of 50% vol. Instead of the Hinoki cypress, which is usually used as a botanical, the Japanese red pine (Akamatsu) is used here, which gives the gin a special note.
The original KI NO BI Kyoto Dry Gin was launched at the Kyoto distillery in 2016. It is based on rice, which creates a clear and soft base. Eleven selected botanicals are used to flavor the gin, including locally grown ingredients such as yuzu (a Japanese citrus fruit), hinoki cypress, sansho berries, green gyokuro tea, ginger, bamboo leaves and Japanese pepper.
A special feature of the production is the division of the botanicals into six groups: Basic aromas, citrus fruits, tea, spices, fruity-floral substances and herbaceous nuances. These are distilled separately and then combined to create a harmonious blend. The name KI NO BI means “the beauty of the seasons” in Japanese, which reflects the philosophy of the gin and its connection to nature.
