The Pichot family is one of the oldest in Vouvray, tracing their roots back to 1739 as restaurateurs. They later acquired the esteemed Coteau de la Biche vineyards in 1770, establishing themselves as growers to supply their restaurant. Their vineyards are primarily situated at the top of the village, with their largest plot making up the classic Coteau de la Biche in the prime Vallee de Nouys, ideally positioned for producing drier wine styles with a southeast exposure. The Pichot family also owns the majority of the premiere coteau site of Le Marigny, located just above the village, across from Clos du Bourg. These sites are considered among the finest in the appellation.
Vinification is carried out in stainless steel tanks at low temperatures, with a small portion aged in used oak barrels for still wines10% for sec, 20% for demi-sec, and even more for sweet wines. The wine is aged on fine lees for six months before bottling, utilizing tangential filtration.
This wine has been recognized as one of the finest in Vouvray for its classic character, rich concentration, and vibrant acidity. While it can be enjoyed young for its freshness, it has excellent aging potential when cellared properly.
