The Chablis vineyard hardly needs an introduction, renowned for producing some of the finest French white wines we have the pleasure to taste. But Clotilde Davenne, who skillfully brings her personal touch to this legendary terroir, is always worth presenting. With deep expertise in the land and soil, she cultivates her parcel near the village of Courgis in the southern region. The vines flourish on mineral-rich Kimmeridgian soil, basking in abundant sunlight thanks to their full southern exposure.
Once the grapes are harvested at optimal ripeness, they are carefully sorted, destemmed, and undergo gentle pneumatic pressing. All fermentations and the 8- to 12-month aging process are done in stainless steel vats to preserve the freshness and vibrancy of the fruit.
In the glass, this cuve reveals a crystalline hue with hints of green. The nose immediately unfolds with distinct aromas of stone and iodine, accentuating notes of vineyard peach, lemon, and almond. The palate is round and full, beautifully enhancing the wines mineral flavors. The overall balance is exquisite, with a pleasant, lasting freshness that carries through to the finish.
