We pick early based on acidity and flavor in order to vinify a fresh and light version of Lodi Zinfandel.
The Cellar: Foot trodden in one ton fermenters, no corrections to chemistry, no inoculations. Pressed to neutral puncheons for a short levage. No racking, no fining or filtration. Minimal effective SO2 at bottling.
