Shallow and rocky soil with iris-colored Triassic marls.Fonteneille:(15 ares) Located on the plateau above Cte de Feule, north-south orientation. 400m altitude. Clay and silt soil on a Triassic limestone bedrock with fossilized mollusks (gryphes).
Viticulture:Sustainable, converting gradually to organic.
Vinification:100% whole cluster. 12-16 day ambient yeast fermentation in stainless steel tank with no added SO2. Pump-overs only, vertically pressed. Aged for 9 months in stainless steel (80%) and in older barrels (20%). No fining, no filtration. Minimal SO2 added after malolactic fermentation and at bottling.
