90% Carricante/10% other local varieties. 2020 was the first vintage of this bottling, from three parcels averaging 80 years old on the east face or “versante est” of Mt. Etna, Eduardo’s first from vines not on the “versante nord” (which lends its name to his main white and red wines). Like many of his vines, these are alberello or bush plantings which he farms organically and harvests by hand. The soils are sandy volcanic ash and the elevation ranges from 750 to 900 meters. The bunches were hand-harvested, destemmed, fermented spontaneously with native yeasts and without sulfur in concrete without temperature control. Maceration lasts for 2 days. The wine was aged for 10 months in tonneaux and then bottled without fining or filtration and with a tiny amount of sulfur.
