These offerings are among the richer, more textured selections Ive encountered here, even though Piuze tends to harvest earlier. His method involves hand-harvesting grapes, pressing them gently in old Vaslin presses, and fermenting the juice in a combination of used barrels and stainless steel. With relatively short sur lie aging, Piuze aims to retain maximum freshness and energy through early bottling. The resulting wines are elegantly textured yet precise, clearly reflecting their origins. This estate is also an excellent choice for exploring village-level Chablis AOC, as Piuze produces a variety of cuves and lieu-dit bottlings that showcase the appellation’s diverse characteristics.
