The Sicilian bitter liqueur Averna, originally developed at the beginning of the 19th century by Benedictine monks from the Santo Spirito monastery in Palermo, was given to the textile merchant Salvatore Averna in 1868. It is made from a variety of 33 Mediterranean fruits, herbs, flowers and spices, including pomegranates, gentian, cinnamon and licorice, supplemented with essential oils from bitter oranges and lemons.
The carefully selected ingredients are crushed and macerated in pure alcohol before being mixed with sugar and water to adjust the strength of the drink.
