This Blanc de Noirs bearing the signature of Clment Robert is the authentic expression of the clayey-limestone and silty soil of this area of the Aube which provides the Champagnes with a strong personality and marked minerality.
The vinification process takes place separately for each parcel, 10 months in barriques and for 4 months in steel tanks; the cuvee is assembled before bottling. Aging on its lees for 14 months and disgorgement ” la vole”
