A unique preservation of the old farmhouse distilling style, Edradour produces 12 casks of whisky a week. Owned since 2002 by Andrew Symington, the founder of Signatory, Edradour has expanded its range to include new bottlings, including the peaty malts under the Ballechin name.
Signatory founder Andrew Symington works closely with the South Tyrolean winery St. Michael-Eppan, which has resulted in a fascinating series of single cask bottlings from red wine casks. In this particular case, a distinctive Merlot was used for pre-fining, giving the whisky unique aromas and character traits.
This collaboration between Signatory and St. Michael-Eppan is an impressive demonstration of how innovative partnerships and careful cask selection can create exceptional whiskies full of character.
