Each July, Forthave founders Aaron Fox and Daniel de la Nuez spend a week in New Yorks Hudson Valley picking fresh, underripe walnuts from black walnut trees to produce this extremely limited walnut liqueur. Based on the traditional spiritnocino, BLACK is singularly focused on this sole botanical and requires eighteen months to fully develop its depth of flavorafter a nine-month spirit maceration, the walnuts are strained and the spirit sweetened before a nine-month resting period in stainless steel and glass demijohns that are placed near the windows of the distillery to sun-mature, adding extra layers of nutty complexity.
