By August 11, Windy Flats was hitting 23 Brix, so harvest was scheduled for August 15 and 16. The fruit at Stewart Ranch came in on August 18, and Watson took until September 10 to reach 23 Brix as the heat seemed to be repressing flavors and ripening kinetics.
